Once the almonds are drained and cool enough to handle, you can start peeling them. Get one nut at a time and with clean hands, pinch it between your index finger and thumb. The skin should slice right off fairly easily. You can also rub the skins off using a gentle back and forth motion with your fingers.
Soak the nuts in hot water. Peel the nuts (in seconds), almonds just slip out of their skins. Split in half. Cut into tiny slivers.

Blanching is done to change the taste of the almond and the color of it. So, what does this do to them nutritionally? Blanching seems to have very little effect on either calorie or fiber content. This also can be said for its protein content.
Blanching is only surface level and allows you to peel the skin. Overnight soaking allows the almonds to absorb water, soften up, become more digestible as well as seep & remove harder/ negative ‘enzymes’ & bitterness into the water, which can easily be eliminated.
