Prime Rib vs Ribeye Taste and texture
That flavor tends to be a bit stronger in the prime rib because of the presence of the bones, fat and connective tissue in the larger roasting cut. The ribeye steak has a milder flavor, with its added marbling giving it a buttery taste and smooth, melt-in-the-mouth texture.
Differences in Flavor
Both prime ribs and ribeyes have very pronounced beefy flavors because of their locations along the animal’s rib. However, the prime rib is often a bit more flavorful than the ribeye since it contains more fat and the bone.
The small end of the ribs is the last three ribs at the back of the rib section and is usually considered the best end because it is leaner than the large end, but still tender and flavorful.

What’s the Best Cut of Prime Rib? The first cut (sometimes labeled the small end or the loin end) comes from the hind of the standing rib roast near the loin. It’s more expensive and generally regarded as the best cut because it has less connective tissue than the second cut and therefore is more tender.
One of the best deals Costco has is prime rib roast. It’s one of the best cuts of meat you can buy and the price can be fairly reasonable compared to some other cuts. Select baby back ribs that are 2 pounds or less for the most tender, juicy meat. Plan on 1-pound servings for two people, or half-pound servings for four people. If serving before a meal, cut up ahead of time, arrange on a large plate and serve with barbecue sauce and lots of napkins!
