In Fire Emblem Echoes, stat gains per level are notably less than they were in Awakening and Fates, so there’s no real reason to hold off on changing classes. Villagers, like other classes, can gain more stat-ups if you wait to promote them. However, getting a Villager to Level 20 early in the game is going to take a long time, and will significantly handicap you. I recommend getting a Villager around to level 8-10 before promoting to whatever class you choose.
Once you do have a unit hit the required level, it’s usually a good idea to have them gain at least a couple more levels, just to maximize their stats and make them stronger. When you want to promote a unit you’ll need to head over to a Mila Shrine.

Gray starts at level five so he can be upgraded as soon as you are able to change classes. When you reach the level to change classes you will find to find a Shrine of Mila. Here you can restore your stamina and use it to change classes.
Recommended Job Class: Faye – Pegasus Knight/ Cleric
As a female character, Faye’s recommended job classes are either the Pegasus Knight for mobility and physical damage or the Cleric for support.

Because of the very useful skills she acquires quite early, Cleric is probably her best class. As a Mage, she’ll probably be Alm’s first unit who can learn Seraphim, learning it even before she promotes.

To reclass, a unit must be holding a Pitchfork item. This will allow them to “promote” to the Villager class by visiting a shrine. Afterwards, they can then promote into a selection of classes based on the gender of the unit in question.

Upon attaining the minimum level requirement of 7, the Villager can rank up to the Mercenary (2nd Tier) which will revert its level back to 1. By gaining 9 more levels, it will reach the minimum level requirement to become a Dread Fighter (level 10).

According to a couple different forums, Faye should probably be in either a Pegasus Knight or a Cleric. There’s a case for both classes. In the tweet below, we can see the images of Faye with a pegasus, indicating that pegasus knight is her canon class.
Once you’ve reach the level you need to reach to change a unit’s class, make your way to the nearest dungeon. Once there, head towards the back of the area (taking out any enemies in your way) and look for the Mila statue at the back. You can only change your unit’s classes by visiting a Mila statue.
The only way to increase Class Mastery is by taking actions during battles. Every action you take during battles will increase your Class Mastery by one point.
